Nebuchadnezzar Zesty Split Pea Soup with Roasted Vegies and Kale

Found this soup at the Country Mercantile in Ritzville Washington.  It's a dry soup to which you add water, tomatoes and hot peppers. I also had leftover, roasted vegies with balsamic vinegar. Put these items together along with a cup of kale ripped up to bitesize pieces.

The whole thing - delicious!

Pineapple-Pear Kale Dukkah Dusted

At the holidays, I received handcrafted olive oil and balsamic vinegar from Washington. This mix is one way in which I used a bit of these gifts.

Saute
2 tsp Basil Olive Oil
1/2 cup pineapple, cut up
2/3 red pear, cored and cup up
1 tbsp Prickly Pear Balsamic Vinegar

Steam
1+ cup kale, ripped to bite size pieces

Serve
Put the pineapple and pear on top of the kale.
Dust with 1+ Tbsn of Dukkah (Egyptian nut-spice mix)

Kale with Fruit in Buttermilk Saute

The buttermilk was for some mashed potatoes that I made, and since I had some left, I thought, how can I use that with some kale. This was the result.

Carmelized the onions to go into the mashed potatoes, and I save 1/4 cup to go with the kale.

Saute
2 tsp olive oil
2 Brussel Sprouts, chopped up.
1/4 cup onion (previously chopped and carmelized)

Add, and cover, lower heat
1/4 pear, cored, chopped (leave the peel on)
1 persimmon, Fuyu or Japanese, short squat one, peeled, cored, chopped
Dashes of chili powder, ras el hanout
2 Tbsp water

Steam for 1.5 minutes
1+ cup kale, ripped to bite size pieces

Add, stir in
1/4 to 1/3 cup buttermilk - it just disappears into the veggie mix

Add, cover, wilt as desired
Steamed kale

Mix it all together and serve.

Kale with Broccolini and Brussel Sprouts

Started out thinking I didn't have any kale tonight, and given that what was the next best thing - brussel sprouts... not the next best thing, like a favorite, but the next best thing nutrition wise. After more than a year of this, I can say that I like kale better than something ... brussel sprouts!

After I got everything going, simmering, I remembered - I froze some kale before my last vacation in October!  I pulled that out of the freezer, and voila - another kale concoction was created.

Saute
2 tsp olive oil
1/3 cup onion, chopped up
3 brussel sprouts, chopped up
1 small sweet red pepper, chopped up

After a bit, add
2/3 cup pineapple, raw, unsweetened, chopped up
1/2 cup broccolini florets
2-3 Tbsp water or other liquid
Dashes of each - chili powder, ground pepper, turmeric, Mrs Dash

Serve with
2-3 Tbsp non-fat greek yogurt, plain
1-2 tsp dukkah
1-2 tsp parmesan cheese, grated
1 tsp worcestershire sauce

Brussel Sprouts Pineapple on Steamed Kale

This was the perfect match for a little pork chop dinner.

Saute
1 tsp olive oil
3 bunch of green onions, white part, sliced up
3 brussel sprouts, chopped up
1/2 cup pineapple, chopped up

Steam
1 cup Kale, ripped to bite size pieces

Mix the kale, brussel sprouts and pineapple.

Serve with a bit of worcestershire sauce.

Indian Potatoes with Steamed Kale

I've been organizing the pile of recipes that I've ripped out of magazines over the course of the last 10 years and finding some great nuggets, like Indian Potatoes. Yum!

This entry isn't about the recipe, but taking a share of the completed product, Indian Potatoes, and putting it on a bed of steamed kale, with a dollop of greek non-fat yogurt (plain).

Indian potatoes starts by heating brown and yellow mustard seed in hot oil til they pop a little. You add cumin seed, turmeric and then the potates that have been cut up. Cook for 20=25 minutes. Then add, coarsely ground coriander seeds, ground cumin, cayenne, and a handful of cilanto leaves. Cook a bit more.

Steam
1+ cup Kale, ripped to bite size pieces

Top with
1 serving of Indian potatoes

Serve with
Dollop of non-fat greek yogurt (included in nutrition count)

A quick side dish to go with a hunk of halibut - a variation on the Kale with Parmesan from last week. Very good, fast food!

Steam
1+ cup kale, ripped to bite size pieces

Toss steamed kale with
7 grape size tomatoes, halved
8 green olives - castelvetrano, halved
3 Tbsp crumbled Feta cheese
1 tsp Dukkah (see previous blog entries too)

1/2 cup pineapple
1 Tbsp of chopped olives

Blockhouse Cafe Navy Bean Soup with Kale

I had a meeting at the Block House Cafe, and took with me my cup of steam kale. Asked them to put the kale in a bowl of their bean soup and voila - dinner!

I don't even want to know the calorie count on their soup, and toasted cheese. It was very good!

Can you mix potato, persimmon, corn and kale?

Can you mix potato, persimmon, corn and kale?! Yes!! I had a persimmon to use. I decided not to peel it, just cut out the core and cut it up. I had a couple of fingerling potatoes, an open can of corn, so the mix just kinda came together.  Very tasty!

Saute
2 tsp olive oil
1/3 cup onion, chopped up
1 Fuyu persimmon, cored, cut up
2 fingerling potatoes, cut up small
1/4 cup corn kernals
1/2 tsp pepper
1/4 tsp chili powder

Add, cover and steam to your desire
1+ cup of Kale, ripped to bite size pieces
splash of liquid - water, juice, wine whatever

Kale Steamed With Parmesan and Dukkah

A quick side dish to go with a hunk of salmon. Very good, fast food!

Steam
1 cup kale, ripped to bite size pieces

Toss steamed kale with
7 grape size tomatoes, halved
8 green olives - castelvetrano, halved
2 tsp capers
2 Tbsp shredded parmesan
1-2 tsp Dukkah (see previous blog entries too)

Serve with
1.2 tsp worcestershire sauce

Brussel Pineapple Egg'n'Kale

This was 20 minutes in the making. Turned out pretty good. That is for Brussel Sprouts and Kale.

Saute
2 tsp olive oil
1/2 cup onion, chopped

Add and continue saute
3 brussel sprouts, chopped up
1/2 cup raw pineapple, chopped up

Push saute to side, and adjust temperature to fry egg:
1 egg

While that's cooking, steam:
1 cup Kale, ripped to bite size pieces

Serve
Place steamed kale on plate and top with the egg and vegie saute.
Dust with some dukkah (the finely chopped nut and spice mix)

Beef Not with Kale

Beef Not is a dried soy product, and quite good, by Dixie Diners. The recipe below made two servings for me (not on the same day, of course).  This is something I found in my notes while cleaning up around here - one of my Kale meals from 2011 that never made it to the blog til now. Nonetheless, delicious and worthy of note.

Ingredients
1 Cup Beef Not
1 Cup Boullion (a cube with 1 cup water)
1.3 Tbsp balsamic vinegar
1.3 Tbsp soy sauce
1 Tbsp sherry
1/2 tsp cinnamon
1/2 tsp ground pepper
1/2 tsp Mrs Dash
1 can diced tomatoes
1/4 cup corn
1 red pepper, chopped up
2 tsp cornstarch mixed with 2 T cold water
2 T water
2 cups kale, chopped up and divided - 1 cup per serving

  • Reconstitue the Beef Not following instructions on package.
  • Saute, and simmer:
      • Beef Not and all ingredients through red pepper for 10-15 minutes.
  • Add, and continue simmer until sauce thickens a bit:
      • Cornstarch mixed with water.
  • Steam:
      • 1 cup of kale
  • Serve by topping the kale with 1 serving of beef not mixture.
