Happy Curry Kale

Started this with a Groupon for frozen food from from Happy Curry Foods.  I envisioned frozen meal
- pop it in the microwave and good to go. But, it turned out to be frozen food ready to be cooked...on the stovetop. And enough food for a small family!  The price was right, though.

Last night - I mixed the kale in with the rice and lentils (or dal). And had the chicken on the side. The food is Nepalese, and spicy. Spicy hot and spicy flavorful.  Very good!

Tonight - mostly the same, but what I did was put the rice, lentils (dal) and leftover chicken in a pot with water and wine, and simmered it all for about 30 minutes. Again - very good!!


No nutrition values for this 'frozen dinner.'

Kale on the go ....

A couple of ways to supplement RTE meals with kale when doing some lite traveling.  All very delicious, and simple.

1.  Madras Lentils - Tasty Bites.
 Microwave the lentils in their pouch. Steam 1+cup kale in m-wave. Pour lentils atop the kale. Enjoy!










2.  Amy's Kitchen - Mexicana Casserole Bowl
Heat Casserole Bowl in m-wave. Steam 1+ cup kale in  m-wave on paper plate. Serve casserole on top of kale. Enjoy!










3.  Soupman's Lentil Soup (yes Soupman from Seinfeld, who knew you could get that at Safeway? No soup for you!).
Very tasty!  Steam 1+ cup of kale in m-wave; heat the soup. Top the soup with kale a bit at a time until both are gone. Won't be too long, this is very good soup!


4. Blockhouse Cafe Split Pea Soup
No calorie count on this one - I am sure it is the lo-cal version!  Arrived home from travels, and proceeded to do yardwork all afternoon, I found that the Cafe had soup today ... but they were just closed when I found out. I gave a call, and lo and behold, they were still there, soup was still hot. I ran over and got some. Steamed 1+ cup kale and added it to the soup. Yum!

Petite French Green Lentil Soup with Kale

I received some Lentil Soup from a friend - it's made with Petite French Green Lentils, with spices and ham. Very good. I added 1+ cup of ripped up kale to the heated up soup, and wilted the kale. Deeelicious!

I added some ground pepper, tsp of Gulden's Brown Mustard, and 6 oz of hard cider. Simmered to reduce the liquid some before adding the kale and wilting it.

Jodhpur Lentils with Kale

How much faster can you make dinner than using TastyBites heat and serve lentils? Plus, it's really good food!

Microwave 90 seconds
1+ cup of Kale, ripped to bite size pieces

Microwave 2 minutes
1 package of Jodhpur Lentils
Mixed with the semi-cooked kale
1 oz of white wine.

Serve and enjoy!

Lentils Roasted Vegie Mish Mash with Kale

Using leftovers tonight, but delicious!

Had some lentil soup in the freezer from December - perfect day to use it.A Spring Day, blustery, rainy, sunny, wind chill. Added some of the Roasted Vegies I made day or so ago. And 1 cup of ripped up kale. Microwave it all.

Top with 1/4 cup non-fat Greek yogurt (plain).

Fast Food!

Friend made big pot of soup and gave a frozen portion to me. I saved it for this week. Made two servings. No calorie count.  Dinner was served within 5 minutes.

After soup thaws, put portion in glass bowl. Top with 1 cup kale, ripped to bite size pieces.

Microwave for 2.5 minutes. Stir kale into the soup.

Microwave again 1 minute.

Serve with a few Ak-Mak crackers. Yum!

Petite French Green Lentils and Kale

I made a variation on my favorite lentil recipe which uses 'balsamic roasted veggies'. And then served it with 1+ cup of wilted kale and some non-fat plain greek yogurt.

TONIGHT'S MEAL

Steam
1.25 cups of cut-up kale, wilt to your desire.
These days, I divide one bunch of kale into 2 meals. Each 1/2 bunch, when cut-up yields a well stuffed cup which is about 1.25 C worth of kale. I steamed this in the microwave using a microwave steamer in the bottom of my quart bowl.

Mix wilted kale and 1 serving of lentils (see below for that recipe).

Serve
with 2.5 oz non-fat greek yogurt (optional. Calorie count doesn't include).

This serving with kale, Rated a 4.7 on the Kale Scale.

Petite French Green Lentils
Cut up for roasting:
1 red potato
1 purple potato
1 rutabaga, peeled
1 carrot
1 fennel bulb
1 onion
1 sweet red pepper
1/2 yam, peeled


Mix with


1 tsp brown mustard

2 Tbls olive oil
2 Tbls balsamic vinegar
1 tsp turmeric
1 tsp black pepper
Roast for about 45 minutes.

While the veggies are roasting, saute:

3 oz ham, pre-cooked, cut up
1 onion, diced

Add:
1 oz white wine
4 cups water
2 vegetable bouillon cubes
1 Tbls fresh thyme leaves
5 cloves garlic, minced
1.25 cups of petite french green lentils, rinsed

Bring to boil and then simmer for 30 minutes.

Add:
Roasted veggies
1/2 C cooking sherry
1.5 C water

Bring back to boil, simmer for 15-20 minutes.
This lentil recipe serves 6.
