Tuna Kale Melt

Tuna Kale Melt ... it was pretty good. I think it might have been better with a better balance of tuna and kale, but this list of ingredients is what it took to get the 1+ cup of kale incorporated into this meal. While I ate both pieces of toast/melt, one could just go for 1/2 and eat a kale salad with it. Hmm... what an idea ... I'll do that next time!

Mix all together:
1 can (4 oz) solid white tuna packed in water.
 2 Tbsp lite mayo
1+ Tbsp dill relish
1 Tbsp sliced olives

Add and mix in with the tuna:
1+ cup kale, cut up fine

Build melt by layering on 1 slice whole grain bread:
1/2 the tuna kale mixture
1 oz of aged havarti cheese

Build a 2nd melt.

Broil both until done to your desired melted-ness.
Enjoy!

Watermelon Pineapple Kale Salad Dusted with Nutmeg

I really liked the addition of nutmeg with this salad. It helped tie the flavors together. Very good!

Toss these ingredients:

25 watermelon balls
2/3 cup pineapple, raw, cut up small
1 oz cheese, extra sharp white cheddar
1.25 cups kale, ripped to bite size pieces
4 tsp Tangerine Vinaigrette (Cindy's Kitchen for Whole Foods)
1/2 tsp Nutmeg

Serve and enjoy!

Watermelon Kale Salad with Grapes and Cheese

A salad for summer - deeelicious!

Layer, toss or mix as desired

1.5 cups of Kale
30 grapes, halved
25 watermelon balls
1.5 oz of sharp white cheddar cheese, diced (Tillamook)

Drizzle with

4 tsp of Tangerine Vinaigrette  Dressing (Cindy's Kitchen for Whole Foods)

Applesauce, Cherries and Kale... really?

Last time I tried applesauce with kale, I used a clementine and some spices - turned out pretty good. This time, it wasn't bad; and I would do this one again, with some changes. Like, not use the cherries - citrus would pair better with this. Add spice (this time I didn't use any; didn't even think about it). The cheese kind of got lost in this once it was all mixed up.

Mix together with a fork

1+ cup kale, cut up fine or mince (I used purple kale)
1 cup applesauce (I used two 4 oz servings of Seneca Natural Applesauce)
10 cherries, pitted and cut up
1 oz cheese (I used Choreherren Kase from Whole Foods)

Pear with Gouda Kale Salad

A simple side salad for my salmon dinner.  The salad was delicious!

Mix, toss, layer - make a salad with:

1+ C   kale, ripped to bite size pieces
1   red pear, cored, cut up (keep the peel on)
1 oz   smoked gouda cheese, diced
9 sprigs  cilantro

Serve with:

2 Tbsp  Fig Balsamic Dressing (Cindy's Kitchen for Whole Foods)

Winter Salad

The spring like weather yesterday inspired a salad.

Toss and mix up, then serve:

1+ cup purple kale, ripped to bite size pieces
8 green olives, halved
12 grape tomatoes, quartered
2 oz whiskey cask cheddar (from Whole Foods)
1 tsp pepper, ground
2 Tbsp Fig Balsamic Dressing (Whole Foods)

Macaroni Cheese and Kale

Needed a quick meal before going to a civic meeting tonight. Annie's makes a boxed mac'n'cheese that works great for these situations.

Make the Mac'n'Cheese according to package instructions. I'll be using half the package which works out nutritionally to 1.25 servings - which I accounted for in the nutritional count.

While the shells are boiling, cut up 1+ cup of kale into thin strips.

When mixing the cheese and milk to the pasta, add 1/2 tsp pepper, 1/4 tsp chili powder, and a dash of Mrs Dash.

After the pasta is done and mixed with the cheese, save half for another night.

Add the kale to the serving that is left,, and mix thoroughly, wetting the kale with the pasta cheese mix completely. The kale will wilt just a bit from the heat of the macaroni.

Serve and enjoy!
