Pear Parmesan Kale Salad
Toss as desired:
1+ Cup Kale, ripped to bite size pieces
1 pear, cored, diced - unpeeled
2 tbsp toasted almond slivers
3 tbsp grated parmesan
2 tbsp fig balsamic vinegar dressing
Enjoy!

Kale Grape Saute
A delicious side dish for a chicken dinner. Simple, too!Saute
1.5 tsp olive oil
1/3 cup onion, chopped
Add
30 grapes, halved
1/2 tsp corianderAfter a bit, add and simmer a moment
3 tbsp white wine
2 tbsp orange juice
Add, cover and wilt
1+ cup kale, ripped to bitesize
Serve with
3 tbsp parmesan, grated

Kale Scamble with Brussel Sprouts Pepper, and Parmesan
Great mix of veggies and protein for dinner - very good!Saute
2 tsp olive oil
1/3 cup onion, chopped
2 brussel sprouts, chopped
1 sweet red pepper, diced
1/2 tsp cardamon
1/2 tsp black pepperAdd, cover and wilt Kale
1 cup Kale, ripped up to bite size pieces
2 tbsp white wine
2 tsp balsamic vinegar
3 tbsp orange juice
Add and scramble
2 eggs, beaten with 2 tbsp milk
1/2 tsp pepper
1/4 tsp turmeric
Serve with
3 tbsp grated Parmesan cheese

Saucy Kale
I had some of the sauce leftover from yesterday's Squash It entry which formed the starting point for tonight's meal. Sautéing the veggies in the sauce and then the kale - umMm good!Saute
3 tsp coconut oil (this is solid at first)
1/2 cup onion, diced
1/2 tsp garlic, raw, diced
Add and continue sautéing
10 grape tomatoes, halved
4 slices of lean Canadian bacon, cup up
Steam 2 minutes
1+ cup Kale
While kale steams, add and simmer sauce made from (about 2+ Tbsp total)
- Hoisin sauce
- wine
- balsamic vinegar
- soy sauce lite

I was going to put the ham and tomato mix on the kale, but instead I added the kale to the sauté pan and mixed it all up.
Serve with parmesan cheese (about 1 Tbsp)

Squash It
I bought a squash - looked like an acorn, but it was all yellow. The label said Swan Winter Acorn and as I google, I find it is also called White Swan Acorn Squash. The link goes to a web page with a picture of what my squash looked like.So thinking I'd go simple tonight.
Cook the squash in microwave, scoop out the seeds and then scoop out the flesh.

Steam 1+ cup of kale (ripped up).
Put the squash on top of the kale and served with a little sauce.
Mix to your desire and pour over the squash/kale:
- Hoisin sauce
- wine
- balsamic vinegar
- soy sauce lite
When all was done, I used about 2 tbsp. of this sauce mix.
Top it all with 1 Tbsp of Parmesan cheese.

Simple Salad with Pineapple, Green Olives and Kale
Simple and quick. Tasty.Mix together, how you like for a salad:
1 cup Kale, ripped to bite size pieces
1/2 cup Pineapple, raw, diced up
8 Olives, green castelverano, halved (pitted)
1 tsp Dukkah (minced nuts, Egyptian style)
Top with:
2 Tbsp Fig Balsamic Dressing (Cindy's Kitchen for Whole Foods)1-2 tsp shredded Parmesan cheese

Spiced Acorn Squash with Kale
Another squash recipe from my archives, to which I embellished a bit. The squash recipe is a keeper!Bake the squash this way:
Cut the squash in half; bake acorn squash with some 100% orange juice in the cavity of each half; along with ground ginger, nutmeg and ras el hanout. No butter. No sugar. No oil.
When it has about 15 minutes left, I added couple tablespoons of buttermilk to each cavity. Mostly because I had some, and thought it might add something. It didn't hurt.Once the squash is done, let it cool a bit. Then scoop out the squash meat and put in a bowl.
Add to the squash meet, some dukkah and some parmesan cheese.
Steam
1 cup kale, ripped to bite size pieces
Mix up
Half of the baked spiced, squash meet
Steamed kale pieces
Serve with a topping of
1.5 oz of greek non-fat plain yogurt

Kale with Broccolini and Brussel Sprouts

Started out thinking I didn't have any kale tonight, and given that what was the next best thing - brussel sprouts... not the next best thing, like a favorite, but the next best thing nutrition wise. After more than a year of this, I can say that I like kale better than something ... brussel sprouts!After I got everything going, simmering, I remembered - I froze some kale before my last vacation in October! I pulled that out of the freezer, and voila - another kale concoction was created.
Saute
2 tsp olive oil
1/3 cup onion, chopped up
3 brussel sprouts, chopped up
1 small sweet red pepper, chopped up
After a bit, add
2/3 cup pineapple, raw, unsweetened, chopped up
1/2 cup broccolini florets
2-3 Tbsp water or other liquid
Dashes of each - chili powder, ground pepper, turmeric, Mrs Dash
Serve with
2-3 Tbsp non-fat greek yogurt, plain
1-2 tsp dukkah
1-2 tsp parmesan cheese, grated
1 tsp worcestershire sauce

Kale Steamed With Parmesan and Dukkah
A quick side dish to go with a hunk of salmon. Very good, fast food!Steam
1 cup kale, ripped to bite size pieces
Toss steamed kale with
7 grape size tomatoes, halved
8 green olives - castelvetrano, halved2 tsp capers
2 Tbsp shredded parmesan
1-2 tsp Dukkah (see previous blog entries too)
Serve with
1.2 tsp worcestershire sauce
