Kale with Dressed Garbanzo Beans and Peach

This was an odd combination to start with, but ended up being pretty tasty!  I had made "Lemony Garbanzo Beans" earlier in the day with a recipe from the Nutrition Action Health Newsletter. This recipe I will present first and then the kale salad.


Lemony Garbanzo Beans
  • Make the dressing with 2 Tbsp Lemon Juice, 2 Tbsp Tahini, and 2 Tbsp plain non-fat yogurt.
    • Add herbs of your choosing. I used 2 tsp fresh chopped chives.
    • The actual recipe called for 2 Tbsp of olive oil, but I left that out.
  • Mix the dressing with a drained 15 oz can Garbanzo Beans
  • Makes 3 servings
 Kale Salad with Dressed Garbanzo Beans and Peach
  • Mix together in a big bowl and then serve:
  • Top with 2 Tbsp of chopped fine toasted, no salt almonds

Kale Ham with Gorgonzola and Persimmons

Deeeelicious!!

Saute
1/2 cup Onion, chopped
2 brussel sprouts, chopped
1.5 tsp olive oil

Add and keep saute
2 persimmons (Japanese), cored, cut up, with peel intact
2.5 oz ham cutlet (precooked kind), diced


Add, lower heat, simmer, wilt the kale and reduce liquid
1+ cup Kale, ripped to bite size pieces
1 tsp Baharat (a middle eastern spice mix)
1/4 cup pomegranate juice (100% juice)

Add and scramble
1 beaten egg
1/2 tsp ground pepper

At the end, add and mix, melt the cheese
1 Tbsp gorgonzola cheese

Mix it all up and serve. Enjoy!

Aged Havarti Sauce with Kale and Pomegranate

Wanted quick and easy, which this was. Tasty, and next time I think I'd add an apple or pear to balance out the flavors. But, this was workable as a side to a Salmon Dinner.

Steam, wilt as desired
1+ cup Kale, ripped to bite size pieces

Heat in microwave or on stove top til cheese is melted
1 oz aged havarti cheese, diced
1/4 cup soy milk
1 oz white wine
1/8 tsp nutmeg
1/8 tsp cinnamon

Mix up Kale with cheese sauce and heat through.

Add and mix up
1.5 tsp coconut, shredded and unsweetened


Serve with
1/3 cup pomegranate arils on top

Can a Kale Smoothie Go Wrong?

Yes - a kale smoothie seems to have its limits. I'm not sure what made this smoothie one of the worst - it might have been using the Lacinato type kale, or maybe it was using the hemp protein powder, or could have been the two dried figs I tossed in it. It was so thick that the straw stood on its own. And so thick that I just didn't even want to finish the whole serving. Seemed to get thicker as I drank it.

If you want to try this, put in a blender or Vitamix and blend away:

1 cup, non fat milk
3 tbsp 100% Pomegranate juice
1/2 cup, blueberries
1/2 carrot
3 clementines, peeled
2 dried figs
1 cup lacinato kale, ripped up
1/2 tsp cinnamon
1/2 tsp nutmeg
2 Tbsp hemp protein powder

Serve and try to enjoy!

Watermelon Smoothie

Half of a small watermelon made about 2 cups for a smoothie. The ingredients were added at random from there.

Add and blend as desired (Vitamix took less than a minute)

2 cups watermelon
1/2 cup pineapple chunks, raw
3 clementines, peeled
2 Tbsp Hemp protein powder (Bob's Red Mill)
1/4 cup yogurt, Danon Light'n'Fit vanilla
1/2 tsp nutmeg
2 tbsp hummus
2/3 cup milk
1/4 cup pomegranate juice
10 grape tomatoes
1.25 cups of kale
