Minestrone and Kale

Fast food again:  Amy's Minestrone Soup with a cup of ripped up Kale. Mmmm-mmm-good!

Ate the whole thing (about 2 cups)

Spring Kale with Egg

This is what I had on Saturday, but posting it today. It was ok.

Saute:
2 tsp olive oil
1/4 cup onion, sliced thin
10 grape tomatoes, halved
1 pear, cored and chopped

While this cooks, steam 1 cup kale pieces in microwave.

Add to saute, and scramble:
1 egg, beaten with 2 egg whites

1 tsp ground pepper

Combine and mix together with steamed kale.

Serve with
2 tsp walnuts, chopped
2 oz non-fat greek yogurt, plain.

Rated a 4.4 on the Kale Scale.

Quick Kale Side

Fresh Sockeye Salmon was the main event tonight. This kale mix was my side dish. Also qualifies as another Keep It Simple recipe.  However...not my favorite.

Saute:
2 tsp olive oil
1/4 cup onion slices
1/4 cup red cabbage chopped

Add:
10 tomatoes, grape size, halved

Add, cover, wilt as desired:
1 cup Kale, chopped
1 tbsp balsamic vinegar

Serve with
2 tsp worcestershire sauce

Rated a 4.25 on the Kale Scale

Kale and Brussel Sprouts with Irish Aged White Cheddar

Continuing with my brussel sprout / kale combinations. I liked this one better than yesterday's. I think the addition of the small amount of pomegranate juice helped. Plus the cheese.

Saute
2 tsp olive oil
3 brussel sprouts, halved and cut up

Add, continue saute
1/4 c onion, thinly sliced
1 garlic clove, minced

Microwave, per instructions on box
2 strips of fake bacon (Morningstar)

Add to the sprouts, cover and wilt as desired
1 cup kale, ripped to bite size pieces
3 tsp balsamic vinegar
2 tbsp pomegranate juice (by Pom)

Add, soften, mix up
2 slices of Irish Aged White Cheddar cheese (about 1.5 oz)

Serve with
Crumbled fake bacon
1.5 oz greek non-fat yogurt

Brussel Sprouts Kale

Brussel sprouts are still a vegetable that have yet to get on my "favorites" list. But, they are supposed to be good for you, so I've decided to keep at it until I find a recipe that works. The rating on this Kale Recipe is a bit lower than others, only because of the brussel sprouts. It qualifies as another Keep It Simple recipe - actually could be a top star for simplicity.

Saute
2 tsp coconut oil
3 brussel sprouts, all cut up into small pieces.
1 tsp black pepper, ground

Add and mix in
2 Tbsp slivered almonds, toasted

Add, cover, wilt kale as desired:
1 cup kale, cut or ripped into bite size pieces
3 tsp white wine

Mix it all up and serve.
