Beet Leek Kale and Bombay Potatoes

The Bombay Potatoes comes in a pouch, heat'n'serve. Actually has 2 servings, but I put the whole thing in this recipe...way too much!

Saute:
2 tsp olive oil
1 leek, sliced - only the white part
1/4 cup onion, choppped
1 yellow pepper, chopped
1 small beet, chopped
2 broccoli flowerets
8 grape tomatoes
1/4 tsp cinnamon
1/4 tsp turmeric
1/4 tsp pepper
1/2 tsp fresh chives, chopped
1 tsp fresh lemon thyme leaves

Heat in microwave:
1 package Bombay Potatoes (Tasty Bite)
Add Bombay Potatoes to Saute.

Add, wilt, and serve:
1 Cup kale
Serve with non-fat greek yogurt, optional

Kale and a Touch of Broccoli

The kale I bought on the weekend has wilted a bit because it wasn't in the vegie drawer in the fridge, so I wanted to do a cooked mix tonight.

Saute:
2 tsp olive oil
1/4 C onion, chopped
1 bunch of green onions, white part sliced


Add, saute:
1 red pepper, chopped
2 broccoli flowerets, sliced up
10 grape tomatoes, halved
1 tsp ground pepper

Add and scramble:
2 eggs, beaten

Add, mix, heat through:

1 Tbsp white wine
1 Tbsp dry sherry
1.5 Tbsp balsamic vinegar
1/2 tsp cardamon
1 tsp ground ginger
1/2 tsp dill weed

Add, wilt:

1 C kale, chopped up

Serve with sprinkle of worcestershire sauce and 2 tsp browned sesame seeds

Fresh Kale Pear Simple Salad

This is from June 16. I accidentally loaded to Garden Galaxy.


I have a few kale recipes saved up to share, but had quite a bit going on to prevent their being posted. Here is the most recent from a couple days ago. I found that the kale I planted in the fall (yes, the fall!) finally did something. I harvested leaves and got about 3/4 cup.

Build salad as follows:
3/4 cup Kale, ripped into bite size pieces
1 roma tomato, seeded and chopped up, sprinkle the pieces on the kale bed
1 red pear, cored, chopped up. Place the pieces on top of the kale and tomato
1-2 Tbsp Balsamic Vinegar and Olive Oil dressing (Safeway Select)
2 tsp of toasted sesame seeds on top


Rated a 4.5 on the kale scale.

First Summer Salad

The last post about chile was really for last night (Thursday). Tonight, it was my first summer salad. Simple set of 4 ingredients. Next time, I'll try a different dressing - it brought the rating down a bit. Annie's is better on a savory salad; one without fruit.

Layer in a bowl:

1 cup kale, chopped up into bite size pieces
11 strawberries, halved or quartered
1 red pear, chopped

Dress with 2 Tbls of Annies Naturals Oil and Vinegar Salad Dressing.



Rated a 4.3 on the Kale Scale.

Chili 'n' Kale


Here's a fast food from the cupboard:

Heat 1 can of Amy's Medium Chili With Vegetables and add 1 cup of chopped up kale. Continue to heat through til kale is wilted. Stir together and eat. Yes, I ate the whole thing.

Citrusy Kale

This concoction grew from one thing after another. I started in a savory direction, but ended up with a fruity mix. It didn't look like much, but was tasty. Next time, though, I might just do a fruit/kale salad.

Saute:

1 tsp olive oil
7 green onions, chopped white part only
1 clove garlic, sliced
1/2 sweet red pepper, sliced in strips
1 roma tomato, chopped
1/2 tsp black pepper

Toss in and continue saute:

1 grapefruit, halved, sectioned -squeeze in the juice too
2 clementines, sectioned
1 oz white wine
1/4 tsp ground coriander
1/4 tsp ground cardamon
1/2 tsp ground cinnamon

Add, cover and wilt:


1 cup red kale, chopped to bite size pieces
