Couscous Kale

A quick meal at the end of the day. Used Nile Spice  Couscous Lentil Curry dried soup - just add water. Let it soak up the hot water. Steam a cup of kale, and mix it all together in a bowl. Add some slivered, toasted almonds on top. Very filling!

Cuban Beans and Kale


My new favorite - steam the
kale in situ, on the plate.
Fairly simple fare. Quite tasty. Dee-licious!

Saute
2/3 cup Trader Joe's Cuban Beans
5 olives, halved - castleverano
10 tomatoes, halved - grape toms
1 tsp olive oil
1 Tbsp Balsamic vinegar
1/2 tsp chili powder
1 tsp basil leaves, dried

Add
1 egg + 1 egg white, beaten

While this cooks, steam Kale on the plate

Top with the egg mixture and serve with Salsa.

Chicken Quinoa Pilaf with Steamed Kale

Used pressure cooker again - worked great!! The Chicken Quinoa Pilaf is variation of a recipe from Pressure Cooker Diaries. I used quinoa instead of rice; and the vegies that I had available were - onion, garlic, 8 brussel sprouts,1/2 cup red cabbage, a rutabaga, 2 golden beets, 1 orange pepper. This was cooked with vegie stock, some wine and spiced with curry, cinnamon, cardamon. The chicken breast tenders, I cut into bite size pieces. This recipe made 6 servings.

I put my serving on a bed of steamed kale, and topped it with 1 Tbsp of mozzarella. The nutrition count is for this serving.

Beef Stew 'n' Kale

First time ever, made a beef stew with a pressure cooker (one of the modern ones). Using leftovers the next day, I took one serving and added a cup of kale to it - microwaved it all for a couple minutes.

Worked perfectly, and was deee-licious!

The stew had beef, carrot, celery, parsnip, turnip, spices, onion, balsamic vinegar, wine and tomoatoes, plus stock.
