1 cup Kale, ripped to bite size pieces
1 red pear, chopped
1 Brooks plum, chopped
10 grape tomatoes, halved
2 Tbsp Tangerine Balsamic Dressing (Cindy's Kitchen for Whole Foods)

Soup'N'Kale (Frozen)
Another easy meal with frozen kale.
Microwave, 2 min, 1 can of Health Valley Organic Vegetable Soup (No Salt Added).
Add 1+ cup of kale, chopped. (Used frozen, but you can use fresh).
Microwave, 2.5 minutes, mix and serve.
Rated a 4.5 on the Kale Scale.

Quick Kale and Egg
Before vacation, I had two bunches of kale that were going to be tossed out, so I washed them, chopped up, put in ziploc bags, and froze them. Pretty easy! Tonight, wanting something easy to fix, I pulled out one of the bags and voila, dinner was 1/2 way made.
Saute
2 tsp olive oil
1/3 cup chopped onion
10 grape tomatoes, halved
While that sautes, cook in microwave
1 ear of corn
Cut the kernals off the corn and add to the saute
Add, cover and let frozen kale, thaw, wilt
1/4 cup water
1+ cup kale, chopped (frozen, but can sub fresh at this point)
Mix it all up, and add
2 eggs, beat together
Add spices and scramble the mixture
1 tsp black pepper
1/2 tsp Mrs Dash
Serve with a splash of worscestershire sauce.
